Traditional escarole with large heads and leaves wrapped in the classic cornetto shape. Leaves are a light green color and very crunchy. Harvested 60-90 days after transplanting. Excellent on its own or in mixed salads with radicchio and lettuces. The traditional technique involves blanching in holes in the soil.
