It owes its great popularity to Acquaviva delle Fonti, which celebrates it in July with the traditional "Festa della cipolla rossa di Acquaviva".
Sizes range from 300 to 900 grams, but in some cases, it has even reached 1.5 kilograms.
The bulb has a reddish-purple color, and when cut, it shows red veins that lighten to white.
In the kitchen, it is delicious in summer salads, as well as in creams and as a seasoning for savory focaccias.
