Description

The Red Onion of Acquaviva delle Fonti is an ancient variety renowned for its sweetness and intense flavor.

A symbol of the Barese Murgia, where it has been cultivated since the 1800s.

It owes its great popularity to Acquaviva delle Fonti, which celebrates it in July with the traditional "Festa della cipolla rossa di Acquaviva".

Its size ranges from 300 to 900 grams, but in some cases, it has even reached 1.5 kilograms.

The bulb has a reddish-purple color, and when cut, it shows red veins that lighten to white.

In the kitchen, it is delicious in summer salads but also in creams and as a seasoning for savory focaccias.

Orto Mio guidelines for the species, to be adapted to the variety, local climate, and cultivation in soil or pots.

Exposure and Temperature

Prefer sunlight. Favorable growth at 10–21 °C; bulb formation and growth require higher temperatures. Strong fluctuations can promote pre-flowering.

Soil and Transplanting

Well-draining soil, pH 6–7; raise the beds in heavy soils. Generally 10–15 × 30 cm per bulb, 5 × 30 cm for shallots. Short-day varieties: October–November; long-day: March–May.

Watering

In the early stages, water only if necessary. During drought and bulb swelling, increase regularity while avoiding waterlogging. Adjust watering according to rainfall and soil conditions.

Fertilization

Apply manure in advance, in the previous autumn, avoiding applications close to transplanting. Balanced nutrition during growth.

Care, Harvesting, and Storage

Shallow hoeing. For bulbs to be stored, wait for the natural bending of the stem and the lodging of the leaves. Dry in a ventilated place protected from rain, then store in a dry place, periodically removing deteriorated bulbs.
