Description

Valdichiana Aglione: delicate flavor and large bulbs

The Valdichiana Aglione (Allium ampeloprasum) is a Tuscan specialty appreciated by chefs and gardening enthusiasts for its particularly delicate flavor, less intense than that of common garlic. Under optimal conditions, the bulb can reach a weight of 800 g.

It is a cold-resistant plant, capable of withstanding even severe frosts. In May, it develops the floral stalk, also known as the “scape”: it should be cut promptly and can be used in cooking. The bulbs are harvested between June and July, when the foliage begins to yellow.

In the presence of environmental stress, water deficiency, or insufficient nutrition, the Aglione may develop a small, round bulb, similar to an onion. This can be replanted in autumn to continue cultivation in the following season.

To promote bulb development, apply an NPK fertilizer at planting time and repeat fertilization at the end of winter. In case of drought, water once a week between March and May, always avoiding water stagnation.

Growing Tips

The cultivation guidelines should be adapted to the local climate, soil, and growing conditions.

Exposure and Soil

Choose a sunny or partially shaded position for a few hours. The soil should be well-draining, preferably with a pH between 6 and 7. In heavy soils, prepare raised beds to limit water stagnation.

Transplanting

The preferred period in the Orto Mio cultivation guidelines is from mid-November to March. For Aglione, these guidelines suggest a spacing of 25 × 50 cm, to be adapted to the soil and garden management.

Watering

Regular rainfall may be sufficient. In case of drought, water weekly between March and May, paying particular attention during the bulb swelling phase. Avoid water stagnation and suspend watering about fifteen days before harvest.

Fertilization

If using organic matter, incorporate it into the soil in advance, avoiding applications close to transplanting. Apply an NPK fertilizer at planting and again at the end of winter. Maintain balanced nutrition, paying attention to sulfur and avoiding excess nitrogen.

Care During Growth

Hoe or weed periodically between the rows to eliminate weeds. In May, promptly cut the scape: it can be used in cooking.

Harvesting and Storage

Harvest between June and July, when the basal leaves yellow or dry. Allow the bulbs to dry in a ventilated place protected from rain, then store them in a dry location.

Useful Information Before Purchase

Harvest times, bulb weight, and sizes are indicative and depend on climate, soil, and cultivation management. The maximum indicated weight is not guaranteed.

The photo is indicative: the plant received may have different sizes and development from those shown.
