Asparagus roots ready to plant, Wild Bitter Montina variety.
This delicious asparagus is characterized by having thinner shoots compared to other more well-known types. Its peculiarity is the pleasant and persistent bitter sensation that we also find in other vegetables like chicory and artichokes; this sensation is contrasted by a moderate sweet tendency, sufficient to enhance the sensory characteristics of this very interesting product, along with the savory/mineral notes that are always present and often lead us to sulfurous and briny aromas.
It pairs well with all culinary preparations that have a good sweet tendency, possibly enhanced by extra virgin olive oil with a ripe and intense fruitiness.

How to Grow Wild Bitter Montina Asparagus:

Prepare a trench in an inverted trapezoid shape, 15-20 cm deep, 30 cm wide at the base and 40 cm at the top, well-drained and well-fertilized with organic matter. The optimal time for transplanting is from November to April. The roots should be placed in a single row at the bottom of the trench, spaced 30 cm apart (3 roots per linear meter), ensuring that the roots are spread out horizontally and immediately covered with 5 cm of soil. The distance between rows varies from 100 to 120 cm. At the end of the first year of planting, cover with an additional 5 cm; it is recommended to harvest 2-3 asparagus per plant (this promotes the strengthening of the asparagus bed). After harvesting (late spring-early summer), allow the foliage to develop and fertilize during the summer with nitrogen and potassium fertilizers. In autumn, when the foliage turns yellow, cut it back to ground level and fertilize with mature manure or similar. During cultivation, keep the asparagus bed free from weeds. Weeding should be very shallow. Water during dry periods.
