Description

Blaue St. Galler potato, a variety of Swiss origin, selected in the 2000s, maintains its blue-purple color even after cooking due to its high anthocyanin content. It is primarily indicated as a niche product for hobbyist/non-professional use and in the kitchen for dishes that are quite appealing to consumers. It requires fertile, medium-textured soils, and for fertilization, standard doses of nitrogen, phosphorus, and potassium should be applied. It shows some resistance to downy mildew, but a disease control plan is advisable. Anthocyanins have antioxidant and anti-radical properties, useful against aging processes, inflammation, and carcinogenic changes.
