Root parsley (or tuberous parsley) is a vegetable with many virtues, and in the kitchen, everything is used, not just the root! The leaves have an excellent aroma, similar to common parsley. The root is white, resembling a carrot, and has a flavor reminiscent of parsnip, but even more pleasant. It can be used raw, grated over dishes and in mixed salads; cooked in soups, paired with fish and boiled meats, but also fried and in purees.
