Description
The Cima di Viola Eggplant is a typical Campanian excellence, featuring elongated, club-shaped fruits with dark purple skin and a slightly spiny calyx.
The plant has a bushy growth habit, and being an ancient variety, it is less uniform and productive compared to other eggplants in the range.
The organoleptic quality of the fruits is highly appreciated, with firm white flesh that is less prone to oxidation and contains few seeds.
In cultivation, a drastic pruning of the vegetation at the beginning of August (when the plant is less productive and susceptible to pest attacks due to the scorching temperatures) encourages a generous production of higher quality fruits from September onwards (in the first harvest in July, the fruits are fewer in number and less uniform).
The Cima di Viola is used in the kitchen for all classic eggplant recipes; it is fantastic when fried and also highly valued for preserves in oil and vinegar.

Exposure and Temperature
Full sun, with slight shading during hot summer days. Favorable temperatures of 18–26 °C; below 10 °C, growth halts. Protect from the cold.
Soil and Transplanting
Fertile soil, rich in organic matter and well-drained, pH 5.5–7.5. Transplant from March, protected, to June depending on the climate. Leave 40–50 cm between plants in the row and 100–120 cm between rows, increasing space for grafted plants.
Irrigation
Regular watering throughout the cycle; the need increases with heat and fruit growth. Adjust quantity and frequency according to the soil, avoiding waterlogging. Drip irrigation helps maintain consistency.
Fertilization
Prepare the soil with mature organic matter 2–3 weeks before transplanting. Support production with distributed contributions over time, approximately every three weeks.
Care and Harvesting
Mulch and support the stem and heavy branches. Remove basal shoots and, in grafted plants, those from the rootstock. Thin out the first fruits until the plant gains strength. Harvest with shears when the skin is still shiny, without waiting for excessive size.
