It is a symbol of the Murgia barese, where it has been cultivated since the 1800s.
It owes its great popularity to Acquaviva delle Fonti, which celebrates it in July with the traditional "Acquaviva Red Onion Festival".
Its size ranges from 300 to 900 grams, but in some cases, it has even reached 1.5 kilos.
The bulb has a purplish-red colour, and when cut, it shows red veins that lighten to white.
In the kitchen, it is delicious in summer salads, as well as in creams and as a topping for savoury focaccias.
