Description
The Cima di Viola eggplant is a typical Campanian excellence, with elongated club-shaped berries, with dark purple skin and a slightly thorny calyx.
The plant has a covering habit, and being an ancient variety it is less uniform and productive than the other aubergines in the range.
The organoleptic quality of the fruit is highly appreciated, with compact white pulp, little subject to oxidation and few seeds.
In cultivation, a drastic pruning of the vegetation at the beginning of August (when the plant is less productive and subject to parasite attacks due to the torrid temperatures), favors a generous production of higher quality berries from September onwards (in the first production in July the fruits are fewer in number and less homogeneous).
Cima di viola in the kitchen is used for all classic recipes based on aubergines; amazing fried and also much appreciated for preserves in oil and vinegar.
