Root parsley (or tuberous) is a vegetable with many virtues, of which all are used in cooking, not just the root! In fact, the leaves have an excellent aroma, like common parsley. The root is white, similar to carrots and has a flavor reminiscent of parsnips, but even more pleasant. Raw, it is used grated on dishes and in mixed salads; cooked in soups, combined with fish and boiled meats, but also fried and in purees.
