Description

The Blaue St. Galler potato, a variety of Swiss origin, selected in the 2000s, retains its blue-purple color even after cooking, thanks to its high anthocyanin content. It is primarily indicated as a niche product for hobbyist/non-professional use and in cooking for dishes that are quite appealing to consumers. It requires fertile, medium-textured soil; as for fertilization, apply standard doses of nitrogen, phosphorus, and potassium. It shows some resistance to late blight, but a disease control plan is advisable. Anthocyanins have anti-radical and antioxidant properties, useful against aging processes, inflammation, and carcinogenic changes.
