Local Cicerchie is a legume with cuneiform seeds similar to pebbles, flattened and angular in shape, with a medium leathery skin, varying in colour from grey to ivory.

Advice:
Cicerchia contains a bitter principle (latirin) that is more indigestible for humans than that of lupins, therefore it requires a longer soaking time than other legumes.
Directions for use (preparation and use):
Preparation method: It is recommended to wash the chickling pea and leave it to soak in water for 24 hours, changing the water two or three times. Discard the water in which it has been soaking and rinse it under running water. Place the chickling pea in the pot with new cold water.
Bring to a boil, continue on a moderate heat for about 120 minutes. At the end of cooking, leave the cicerchia in the water, to avoid hardening caused by cooling. Drain at the last moment, before the final preparation. Cooking times are indicative as they can vary depending on the variety and origin of the product and the type of preparation you want to obtain.
