They are small legumes, with a flattened lenticular shape and green in color with a yellow cotyledon. Their botanical name “Lens” comes from the lens shape of the seed.

Directions for use (preparation and use):
Ideal for soups and broths. According to tradition, they are an excellent tasty and auspicious side dish. They remain compact after cooking. They are among the fastest cooking legumes. They do not require prior soaking.
Preparation method:
After having washed the lentils thoroughly, put them on the stove in cold water, in a pot, preferably earthenware. Bring to the boil and continue cooking over low heat for about 20 minutes. In a pressure cooker, about 7 minutes from the start of the whistle are sufficient. Add salt towards the end of cooking. Cooking times are indicative as they may vary depending on the variety and origin of the product and the type of preparation you want to obtain.
