They are kidney-shaped legumes, ivory or pink in color with burgundy-brown streaks. They are the classic beans of a very widespread variety, especially in northern Italy, where they are also produced. There are many varieties of borlotti beans that are distinguished by their more or less marked flavor, rounded or elongated shape, production area and organoleptic characteristics.

They are excellent in salads and ideal for soups, minestrone, pasta and beans, risotto or simply as a side dish. When raw they are unmistakable for their mottled skin, after cooking they tend to be pink. They are tasty and have a rather robust consistency.
Preparation method:
Soak the beans in cold water for 4/6 hours. Replace the water and put them on the stove, preferably in a clay pot. Bring to the boil and continue cooking over low heat for about an hour. In a pressure cooker, about 20 minutes from the start of the whistle are sufficient. Add salt towards the end of cooking. Cooking times are indicative as they may vary depending on the variety and origin of the product and the type of preparation you want to obtain.
