Description
Pearl Barley is a cereal that has ovoid-shaped grains, light in colour with a rounded back and a grooved belly in the centre.
Once “pearled”, that is, deprived of the external husks and the underlying bran through an abrasion process, it becomes lighter in color (milk white). This process makes it quicker to cook, without eliminating any fundamental nutritional principle.
Barley is demineralizing and easy to digest, also suitable for children. It is among the cereals richest in proteins, in particular the presence of hordeine that has an action similar to adrenaline, precious for the cardiotonic action. It contains little fat and is rich in important mineral salts: phosphorus, potassium, calcium, iron, silicon. It has excellent refreshing properties, therefore it is recommended for use even in summer.

Preparation method:
After having washed the barley thoroughly, put it on the stove in plenty of lightly salted boiling water and continue cooking for about 30 minutes. In a pressure cooker, about 10 minutes from the start of the whistle are sufficient. Cooking times are indicative as they can vary depending on the variety and origin of the product and the type of preparation you want to obtain.
Advice:
It's an excellent substitute for pasta and rice.
